Happy Friday the 13th, how fun! I thought on this rainy day that turned beautiful, I would share the yummy recipe I put together while baking last week. I was craving a chewy Peanut Butter filled cookie, but couldn’t find the exact thing I was after. I just love a good chewy cookie, one that tastes like a substantial snack. We never buy store bought for this exact reason, they are always too hard/dry and taste stale! So I put a couple of recipes together, threw in left over potato puree, and came up with this one – I hope you enjoy.
They got thumbs up from every one of our kids, and a “Hon, these are delicious” from Joel (the avid sweet tooth in the house, he put a large dent in the stash).
Let me know if you end up making these, and how they turned out for you. I would love to hear your feedback and anything you might do/did differently. The icing was a simple mix of melted butter, icing sugar, and scoop of PB – adding the ‘sweet’ I felt the cookie needed.
